I’ve been cooking with dried beans lately as part of trying to keep my diet from getting boring (ugh, these damn salads). The Bean Bible has been a helpful site.

For salad -- there is a new thing called broccoli slaw. With a couple of Tbsp of diet blue cheese dressing and .25 cup of cottage cheese, it is a great salad.

Why are you eating greens and beans? Do you not like vegetables? Odd juxtaposition, I know. I've recently been changing my diet to something safer and environment-friendlier, so I'm eating lots of vegetables and fruit. If you can get spicy hummus, especially the lowfat variety, you can use it as a dip for your veges, or mix it with a nice salsa for a different sort of salad dressing.

It's not that I don't like greens, they just don't fill you up. The hummus suggestion sounds great though.
